Apricot Oatmeal Cookie

3/4 c. snipped apricots
3/4 c. butter
1 c. brown sugar
1/2 c. sugar
1 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. baking soda
1 egg
1 tsp. vanilla
1 3/4 c. flour
2 c. rolled oats
1/2 c. walnuts

 Powdered sugar frosting:
1 c. powdered sugar plus enough milk (2-3 tsp.?) to drizzle
Cover apricots with boiling water.  Let soak for 5 min.  Drain. 

Bake 375*
10 min. on ungreased pan

Peanut Butter Bars

1 cup butter
1 cup brown sugar
1 cup white sugar
2 eggs
2 cup oatmeal
2 cup flour
2/3 cup peanut butter
1 tsp vanilla
1 tsp baking soda
1 tsp salt

Mix and bake 350* for 20 minutes.

Can add chocolate chips or frost with chocolate frosting. 




Cowboy Cookies

1 cup butter or margarine, melted
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
2 cup flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 cup oatmeal
1 package chocolate chips

Beat sugars and butter until creamy then add eggs and vanilla. Add dry ingredients. Bake 350* for 9-11 minutes or until done.
